Tonight!

I have to start off by saying that tonight was a lot of fun for the most part. Great conversation at our table with some awesome people...Hal and Gord talked fishing, we ladies talked about streakers/flashers and hellooooo don't just flash us and think that's a thrill baby...give us sumpin' to talk about, lol. It was quite the topic and we were in stitches.

Food was excellent, music while we were there was good and the Awards part of the night was too. It was nice to feel that positive energy about our little town and omg, Paul H. and Ron B. were hilarious. They produced quite a few laughs as well.

Hal and I headed home at 10 p.m. He's still really sick and truthfully, if someone could rip my throat out and pierce my eardrums i'd feel a helluva a lot better. The fever was starting to kick in as I left tonight and silly me forgot our gifts of a book light and hoselton. We won the centerpiece but didn't want to take that so early, they were very pretty.

The Golf Course was decorated up quite nicely too...great job by the decorating committee. Again, best part of the night was the buzz of energy and excitement of what will hopefully be a turnaround for Kitimat. I love our town and hope we can get past this political bs and that their focus will turn towards ECONOMIC DEVELOPMENT for Kitimat and stop wasting our tax dollars on a court case that has been turned down time and again.

Way to go Chamber of Commerce for bringing a good portion of the Business Community together in such a positive way.

ARE WE LIVING THE MOVIE 'GROUNDHOG DAY'

Holy crap...talk about rewind on the weather!!! It must have snowed close to two feet in less then 24 hours and add to that all the rain that fell too!!

Couple of days of Spring type weather and WHAM...SNOW! The power went out in quite a few areas of town so school was cancelled and the kids had a real SNOW day today.

Guess it's supposed to be sunny by tomorrow afternoon but i'm not holding my breath on that one from the looks of it out there tonight.

Why do we do this to ourselves...or is it just me?

I'm having a Pampered Chef party tonight and i'm so excited to entertain.....live for it in fact and wish we did more of it. However, that is part of my issue. I know my friends don't come to judge how clean my house is or isn't but I get panicky and stress about it being clean. I don't want anyone to think that Hal and I are pigs and don't care about our home.

I know this stems back to visits from his Mom and Grandma. They wouldn't say anything to your face but didn't have a problem telling the rest of the family. The kicker is that our house was never messy there either but it seemed like they weren't happy unless they made you unhappy or were complaining about something. When Hal and I renovated our kitchen all freaking hell broke loose!! Well we were just going to make a mess of it, we couldn't possibly know what we were doing, etc. The end result was one very bright, clean and more to our liking kitchen and they all liked it too.

Anyways, back on topic. Last night I got a call that work was changed from morning shift to afternoon and that put me into panic mode. OMG, I had planned on coming home from work early afternoon and vacuuming, scrubbing floors and do a tidy up on the bathroom. Well I was up until 2 in the morning putzing around and managed to organize the pantry a bit better, cleaned the office, guest bathroom and bedroom and got a load of dishes through the dishwasher. Now this seems like a lot but it was just little odds and ends that i'd been procrastinating and got them done.

I'm not stressed now but it frustrates the bejeezus outta me why I let myself get turned inside out over really little shit. OCD MUCH!!!!

Going to have fun tonight regardless of what happens. The weather isn't very agreeable so not sure if Carla will make it in from Terrace for the party. If not, well there's a bottle of tequila, a lime and some snack stuff....PARTY AT PENS!!!

On Wednesday night i'm hosting a Pampered Chef party. Well we're both feeling a little panicked cuz the bathroom isn't finished and the house is a gong show! Tonight Hal comes home from work and he says "Well aren't you going to clean the windows too?" "Hello, earth to Hal. This is a Pampered Chef party not the Queen's Inspection crew coming over!" LOL. I love him but silly man. Regular housework and finishing the bathroom is the main goal.

-Yogurt lasts quite awhile past the due date kind of like sour cream...it's already sour so guess when there's green stuff on it then it's bad!

-When dogs and cats fart why do they look at their butt like it's not theirs, then look at you like you're the culprit?

- If you burp, fart and sneeze all at the same time is it possible to take a breath AND what are the chances you'll crap yourself, blow a boogie across the room or blow a chunk?

- Why do men give chocolate on Valentines Day? Doesn't chocolate cause the body to release the same hormones that leave a woman feeling satisfied after an orgasm?

HOLY HELL THIS IS AN AWESOME AFTERNOON!! Hunny and I are bbq'ing steak and i'm enjoying a stiff rum n' coke on the back deck.

You know there might be a little snow at my feet but the sky is blue, the snow is almost gone from the front yard and most of all......IT'S THE GODDAMNED WEEKEND!!

The week wasn't long but for some reason this weekend seems like it's going to be good.

I'M CRANKY!!

and tired of some bullshit in my life!! Can't go into details here just yet but will soon. Let's just say that I really need to make some changes in certain areas of my life and tonight I'M JUST FEELING BITCHY!! I warned Hal that I was feeling this way and that it wasn't him just other crap.

I feel trapped at times and stuck but not sure what to do. Pulled out a journal and thought i'd start writing again, lots of times what's bugging me but am unable to put a finger on it comes out that way.

Another thing is my home office/work space. This weekend will be the time that it gets organized so I can utilize the space and my crafty things!! Perhaps this will help get the creative juices flowing, lol.

Enough venting right now, just focus on what I need to do to find satisfaction with certain parts of my life.

Another successful meal!

Hal and I were both thrilled with tonights dinner! It turned out better then imagined. The only thing I would do different is to cut the pork thinner, more like the stuff served here.

Chicken soup IS good for the soul!

k, not one to toot my own horn but gotta say that lately i've been on a roll with cooking some great meals!!

Tonights chicken soup turned out fabulous and was so easy to prepare. I'll try to post a recipe/method of cooking but it's hard because I just throw things together but here goes:

Leftover roasting chicken
8 to 10 cups water or enough to cover the chicken

In this water I added:

2 cloves of garlic cut into easily removable chunks
2 tsps. pepper (we like the heat)
2 tsps. Mrs. Dash Chicken
1 tbsp. chicken oxo
1/2 teaspoon dried thyme
1/4 cup fresh parsley leaves
2 Bay leaves (remove when you drain the broth)

Let this simmer for about two hours and boil down.

Remove the chicken and let cool, drain the remaining water through a sieve into another pot to remove any small bones, etc. Pick out pieces of chicken and put with other chicken.

Chop:
3 med. carrots
3 stalks celery
1 small onion or more depending on what you prefer
1/2 cup Orzo pasta or pasta of preference unless you're adding potatoes.
1 cup of fresh sugar snap peas or veggies of choice.

Put these in the pot and bring to a slow boil. Pick chicken off the bones and add back to the soup.

Boil until veggies and pasta are cooked.

Think I got everything and that it turns out as well for you as ours did!

KITIMAT IS MORE THEN THIS SHODDY DISPLAY!

This really ticked me off as it was such a crappy view on what Kitimat is.

Dirk Meissner's Globe and Mail video

Dirk Meissner does not tell the whole truth about Kitimat. Sure this is part of Kitimat but he makes it sound as though there is absolutely NOTHING left of Kitimat but these decrepit buildings. There is no mention of the new hospital, Delta King and other developments going on in Kitimat right now. He implies there is no shopping mall or shopping period, no liquor stores. He fails to mention the library, our recreation facilities, real estate OFFICES, banks, post office, Museum, the open stores in the Service Centre were completely voided from his video other then a quick scan at the roof of a couple of them past a filthy snowbank.

What about the outdoors, snowmobiling, fishing, cross country skiing, 25 minutes from an Airport.

People need to know this is out there!!! Please post these to your site if you so choose. We need people to know that this is not the true Kitimat.

Meal Plan Monday

Head on over to Laura's and check out Meal Plan Monday if you're new to it. Hal and I find that it's definitely saving on groceries as we only by what we need, it's awesome!!

This week we'll be having:

Roast Chicken, stuffing, mashed potatoes, steamed carrots and gravy

Homemade chicken soup, salad (going to look up some new ones) and buns

BBQ Pork, chow mein and stir fried veggies

Beef Stew, fresh dinner rolls and salad - Any one have a suggestion for this one??

Lasagne, ceasar salad and bruschetta

Chicken, Broccoli Fettucine, mixed greens salad and garlic toast

Not guaranteeing everything will get cooked but we're going to try this week....and what are you planning for your meals?

Thanks for the Spinach Salad suggestion. I will definitely try that one plus I did a google search and found this one, which Hal seemed open to try, lol:

Baby Spinach Salad with Tomato and Mozzarella Recipe

Ingredients:
5 ounces baby spinach leaves
1/2 cup fresh basil leaves -- cut in thin strips
1 beefsteak tomato -- cut thinly crosswise
1/4 pound part-skim mozzarella -- diced
2 teaspoons fresh oregano -- chopped fine
2 teaspoons balsamic vinegar
2 tablespoons olive oil
Kosher Salt and Ground Black Pepper to Taste

Directions:
Alternate layers of spinach and tomato across plate.
Top with basil, mozzarella, and oregano.
Dress with oil and vinegar. Season to taste. Serve.

Who the hell supported this well orchestrated display of bullshit on our town? I have a good feeling that I know and trust me this is more of a SINK THE NORTHWEST then anything else.

Take from it what you will, we all have our own opinions on Kitimat, Alcan and the District of Kitimat. I for one am PRO KITIMAT!!! We have invested in this community and i'm disgusted to see this video and article out there as a picture painted by those who obviously have no vested interest in our town.

You have the correct screw...right? U speak Manglish?

Yesterday was such a wonderful, sunshiney, happy, blessed, I love my hunny kinda day...okay so maybe I just loved my hunny.

We were putting the light fixtures in the bathroom yesterday, the vanity light went in without a hitch (other then the fact we have to drop the mirror a little bit). On to the ceiling light.....
We take down the old one and dh puts the anchor in for the new light, does all the wiring, etc. Well it's time to attach the base to the screws...should be easy right!?!?!?!?!

The screws are about 1/2 inch to short so I say to Hal "We need longer screws, there's no way in hell these are going to work." He says they should work it's what came with the light. So we mess around with it trying different things for about 15 minutes and he's getting piffy thus i'm piffin' back. I said "Are you sure you have the screws in the right holes?" Sooooo, let's just say the 'piff' factor goes through the roof and I make a comment about him being "my superhero!" as I storm out of the bathroom.

I leave him in there by himself for a bit holding onto the light fixture and to figure it out on his own since I couldn't possibly know what I was talking about. About 20 minutes later I venture in to the bathroom to see how far he's gotten (hehehehe) and he says "Well maybe we should take the other screws out and switch them to see if they're a little longer." "okay hun, do what ya want" (meanwhile i'm thinking 'was I not speaking English? Perhaps it's not Manglish so it does not compute')

Needless to say he switches out the screws and voila...the base can be secured to the ceiling!!! I love my Super zero!! He lights up my life even when he pisses me off. Today he was doing the faucet, the caulking, towel and tp holder, shower hanger and something else....ahhh, i'm so happy to be at work!

Tonight we put the pictures on the wall and do a major cleaning then it will be time to put the finishing touches and pictures will be posted.

**edited to add: in no way do I think Hal is lacking smarts but sometimes his stubborness gets in the way of his intelligence, lol. Also the camera died so it's charging now and omg...so far it's awesome. Hal just has to finish caulking and i'm framing pics!!

BUTTER CHICKEN

Shari and I were talking about Butter Chicken recipes after the Tandoori turned out so well. The only thing was there was no sauce to sop up with the Naan or chicken or if you wanted to put some on your rice. Well I had tried making butter chicken before but by using a pre-made sauce..you just added tomatoes. IT WAS DISGUSTING!!! However, I came across this recipe and will be adding it to next weeks menu.

Butter Chicken Recipe

2 to 3 tablespoons of butter
1 onion
¼ teaspoon of cinnamon
2 teaspoons of crushed garlic
2 teaspoons of crushed ginger
½ teaspoon of ground turmeric
1 to 2 teaspoons of chili powder
1 tablespoon of coriander
400 grams / 14 oz of skinless, boneless chicken thighs or breasts
¼ to ½ cup ground almonds
225 gram / 8 oz can of whole peeled tomatoes with juice
1 tablespoon of tomato paste
½ cup of unsweetened yogurt

With chicken there is always a risk of food poisoning, so it is important to clean your hands, board and knives before and after working with the raw meat. Trim and cut the chicken into small cubes, cover and put aside.

With a clean knife and board slice the onions into thin wedges (lyonnaise).
Heat a large saucepan or frying pan and melt 2 to 3 tablespoons of butter until it is frothy. Add the onions and the cinnamon to the pan and fry lightly.

When the onions are soft stir in the crushed garlic and ginger. Then add the turmeric, chili and coriander. Sauté over a medium heat. The spices are fried first to release their maximum flavour and this really enhances the dish.

Add the cubed chicken and sauté stirring constantly until the chicken has turned white.

Pour in the ground almonds, tomatoes and tomato paste. Mix thoroughly. Cover and simmer for 20 to 30 minutes.

Add the yogurt and heat through. Serve on rice with a salad and Indian bread if desired.

Well, we've done it!!

We finally purchased our drift boat!! OMG Hal's so excited and nervous but we know that this is something we'll get a lot of enjoyment out of. A friend would lend us his last summer but it's just not the same as having our own. Hal's also looking forward to getting out with friends as well for that guy time.


Hal and Doug started looking last summer for one but they were few and far between and some in questionable condition. This one is a beaut!! The fellow who sold it to us had sent us pics of another one but this morning he called and said he had one that was 4 years newer, twice the boat and only $900.00 more so that's the one we bought.

BBQ Pork recipe




Ingredients :
750 g. of pork rump or butt
15 bamboo skewers

For the marinade :
1/3 c. lemon juice
1/2 c. of dark soy sauce
2 tbsp. of finely minced garlic
1 onion, finely chopped
1/4 c. of catsup (banana catsup, preferably)
1 tsp. of ground black pepper
2 tbsp. of sugar
1/2 c. of 7Up

Cooking procedure :
Rub two bamboo skewers together to smoothen them. Repeat for the rest. Wash them under the tap then soak in water for at least 30 minutes prior to use to avoid burning in the grill.

Slice the pork meat into 1/4 inch thick slices. Cut the slices into 2 x 3 pieces. Place in a glass bowl.

Mix together all the ingredients for the marinade and pour over the pork meat. Mix in the marinade well with the meat using your hands. Cover and let stand in the refrigerator for at least an hour, mixing the meat every fifteen minutes or so to let the pork pieces marinate evenly.

Drain the bamboo skewers and wipe with a clean kitchen towel. Thread the pork pieces, about 5 pieces per bamboo skewer. Reserve the remaining marinade for basting.

Grill about 6 inches from live coals/BBQ.
Using a kitchen brush, baste with the marinade every few minutes on both sides.
To test for doneness, slice a piece of pork at the middle of the skewer. If the juices run clear, the meat is done.

Is this too Green?

I've been messing around with my blog now for 3 or 4 days and finally settled on this. Loved the dew on the grass and just wanted something with a Spring feeling to it. I'm so done with winter and am looking forward to getting my gardens growing this year and clearing the mess of bushes on the Green belt side of our home.

Off to watch Survivor!!

Edited to add: Been back and changed the grass for flowers as I thought it would break up the green a bit.
